| A grape berry is, by weight 75 % pulp, 20% skin, 5% seeds. Pulp is the juicy centre of the grape which will become the wine. Pulp contains mostly water and sugar and small amount of acids, minerals, and vitamins. It's the sugar in the pulp that is crucial to vinification, since it is the sugar that will be converted to alcohol. As for the skins, they get to play the sexy part. They are responsible for the wine's aroma and flavour, as well as its color and tannin. |
